Baked Apples
Whole, baked apples are a super easy, no-fuss dessert. No need to peel the apples, just fill with a buttery, mix of brown sugar, pecans, cinnamon and bake. What could be easier.
INGREDIENTS:
4 large baking apples, Honeycrisp or Haralson
1/4 cup brown sugar
1 tsp cinnamon
1/4 cup chopped pecans
1/4 cup currants or chopped raisins
1 Tbs. butter, cut into 4 pieces
3/4 cup boiling water
INSTRUCTIONS:
Preheat oven to 375 degrees.
Rinse and dry the apples. Cut a 1" hole holes in the top of apples for stuffing, using a sharp paring knife or apple corer, leaving the bottom 1/2 inch of the apples intact to hold the filling. If using a paring knife, first cut out the stem area and then use a small metal spoon to scoop out the seeds.
Place the brown sugar, cinnamon, pecans, currants or raisins in a bowl and stir to combine.
Stuff apples, then dot with butter.
Pour the boiling water into the bottom of the baking dish. Bake 375 for about 30-40 minutes, until the apples are cooked through and tender, but not overcooked.
Baste them with the juices from the pan. Serve with a scoop of vanilla ice cream or drizzle with salted caramel sauce.
